Slow Cooker Chicken Taco Soup

This recipe yields 8 servings


1 onion chopped

1 (16oz) can of chili beans

1 (15oz) can of black beans

1 (15oz0 can of kernel corn, drained

1 (8oz) can of tomato sauce

1 (12 oz) can of beer

2 (10oz) cans of diced tomatoes with green chilies, un drained

1 package of taco seasoning

4 whole skinless boneless breasts of chicken

  1. Place the onion, chili beans, black beans, corn tomato sauce, and beer and diced tomatoes in a slow cooker. Add taco seasoning and stir to blend. Lay chicken breast on the top of the mixture, pressing down slightly until covered by ingredients. Set the slow cooker for low heat, cover and cook for 5 hours.
  2. Remove the chicken breasts from the soup; allow them to cool long enough to be handled. Stir the shredded chicken back into the soup; continue cooking for 2 more hours. Served with reduced fat cheddar cheese, fat free sour cream, and crushed baked tortilla chips.
